Puglia is the heel of Italy’s “boot,” a peninsula with endless shorelines and pastel waters, where the Adriatic and the Ionian meet. While it has vestiges of foreign influences from the past, it definitely has an authentic flavour all its own. Conical little houses dot the Itria Valley, Baroque and Romanesque architecture abounds—and the mozzarella and other local fare are to die for. What’s not to love?

Flight to Bari.

Take the road along the rugged and wild Adriatic coastline to the Gargano promontory. Stop in Vieste, with its imposing 13th-century castle, then at Pizzomunno for a photo op. Have lunch where you please. Continue on to Monte Sant’Angelo for a tour of the Sanctuary of San Michele Arcangelo, a UNESCO World Heritage site. Return to the hotel and enjoy dinner on your own. (B)
Take a morning tour of Trani, including its seaside cathedral. Free time for lunch. In the afternoon, explore Castel del Monte, a masterpiece of medieval architecture. Continue to Polignano a Mare and check in at the hotel. Pietrablu Resort & SPA 4* (B-D)
Stop at an organic cheese factory for a mozzarella-making demonstration and tasting, then take a guided tour of the Castellana Caves. In the afternoon, visit Polignano a Mare, renowned for its cliffside houses, and sample local artisanal gelato. Return to the hotel and enjoy dinner on your own. (B)
Head to Altamura to view the majestic Cathedral of Santa Maria Assunta and its two bell towers. Stroll the old alleys and cloisters of the medieval village, then pop into a bakery to savour the bread the city is famous for. Continue to Matera, a UNESCO World Heritage site, to explore its sassi, cave dwellings inhabited since prehistory. (B)
Visit Alberobello, a UNESCO World Heritage site known for its trulli. Enjoy lunch with local specialties in a trullo. In the afternoon, stop in Locorotondo—one of Italy’s most beautiful villages—to see the iconic cummersa sloped roofs. Continue on to Martina Franca, a stunning Baroque town in the Itria Valley, and dine at a traditional restaurant. (B-L-D)
Tour the “White City,” named for its whitewashed houses. Highlights include the cathedral, episcopal palace, and Church of Santa Maria della Stella, with stunning views of the surrounding countryside. Visit a centuries-old olive grove near a masseria for an olive oil tasting and traditional dinner. Head to southern Puglia. Hotel to come (B-L)
Tour of Otranto, including its castle and cathedral. In the afternoon, scenic route along the Salento coast to Santa Maria di Leuca, a stunner of a town where the waters of the Adriatic and the Ionian meet. (B)
Visit Gallipoli and cross the stone bridge to the historic centre on an island, home to the 13th-century Angevin Aragonese castle and the Cathedral of Saint Agatha, a stunner of Baroque architecture. Take in other churches in the city from the outside, then continue on for fantastic views of the coastline and beaches. In the afternoon, take a guided tour of the historic centre of the town of Nardo, followed by a wine tasting. Head back to Lecce. (B-D)
